      Cuitlacoche San Miguel, also known as “corn truffle,” is a prized ingredient in Mexican cuisine, with an earthy, rich, mushroom-like flavor. For an authentic lunch or dinner, use it to make classic quesadillas de cuitlacoche : heat a corn tortilla, add a layer of drained cuitlacoche, chopped onion, and melted cheese. Fold the tortilla in half and cook on a griddle until the cheese melts and the tortilla is lightly browned. Serve with salsa verde or sour cream for a creamy touch that enhances the unique flavor of cuitlacoche.


      For a sophisticated appetizer, you can use cuitlacoche to fill savory vol-au-vents . Mix the cuitlacoche with sautéed onion and cooking cream, then fill the ready-made bases and bake them for a few minutes.
