PREPARATION
To prepare a delicious cochinita pibil, marinate 1 kg of pork with the entire contents of the jar of Xatze Pibil Marinade. Leave to marinate for at least 4 hours, preferably overnight. Cook slowly in the oven at 160°C for about 3 hours, until the meat is tender and easily shreddable.
Serve cochinita pibil with warm corn tortillas, marinated red onion and a squeeze of lime. For an authentic touch, wrap the meat in banana leaves while cooking.
