Beef Picadillo Recipe

Picadillo de Res is a traditional Mexican dish made with ground beef, potatoes, carrots, peas, tomato and spices. Perfect as a filling for tacos, tostadas or to enjoy with rice.
📝 Ingredients (for 4 people)
Minced beef – 500 g
Medium potatoes – 2 (peeled and diced) 🥔
Carrot – 1 (diced) 🥕
Peas – ½ cup (fresh or frozen)
White onion – 1 (chopped) 🧅
Garlic – 2 cloves (chopped) 🧄
Ripe tomatoes – 2 large (or 200 g of puree) 🍅
Chipotle Pepper – 1 (optional) 🌶️
Vegetable oil – 2 tablespoons
Bay leaf – 1
Salt and pepper – to taste 🧂
Fresh coriander – for garnish (optional) 🌿
👉 To accompany:
Warm corn tortillas 🌮
White rice 🍚

👨🍳 Preparation
1️⃣ Sauté the base: In a large skillet, heat the oil and sauté the onion until translucent. Add the garlic and chopped chili pepper, and cook for 1 minute.
2️⃣ Add the meat: Add the ground meat and cook over medium-high heat until well browned, breaking it up with a spoon.
3️⃣ Combine vegetables and sauce: Add chopped tomatoes (or puree), potatoes, carrots and peas. Mix well. Season with salt, pepper and bay leaf.
4️⃣ Slow cooker: Cover and cook over medium-low heat for 20-25 minutes, stirring occasionally, until the vegetables are tender and the mixture is well combined.
5️⃣ Serve: Serve the picadillo warm with rice, tortillas or tostadas. Garnish with fresh cilantro if desired. 🌿
