Chicken Tinga Recipe


Tinga de Pollo is a traditional Mexican dish made with shredded chicken cooked in a tomato, onion and chipotle sauce, which gives it a smoky and slightly spicy flavor. Perfect for tostadas, tacos or burritos , it is a simple and delicious recipe, ideal for any occasion!


Ingredients (for 4 people)

  • Chicken breast – 500 g

  • Ripe tomatoes – 4

  • White onion – 1 large (thinly sliced)

  • Garlic – 2 cloves

  • Chipotle peppers in adobo – 2

  • Chicken broth – 250 ml

  • Bay leaf – 1

  • Dried Oregano – 1 teaspoon

  • Seed oil or olive oil – 2 tablespoons

  • Salt and pepper – to taste


👉 To serve:

  • Tostadas or corn tortillas 🌮

  • Sour cream or Mexican cream

  • Sliced avocado 🥑

  • Crumbled fresh cheese

  • Fresh coriander


Preparation

1️⃣ Cook the chicken:

  • Bring the chicken to the boil in plenty of water with salt and a bay leaf.

  • Cook for about 20-25 minutes until tender.

  • Drain it and shred it with two forks.

2️⃣ Prepare the sauce:

  • Blend the tomatoes with the garlic cloves, chipotle peppers and half a cup of chicken broth until you get a smooth sauce.

  • Season with salt and pepper.

3️⃣ Fry the onion:

  • In a large skillet, heat the oil and fry the onion slices until golden.

  • Add the oregano and chipotle tomato sauce.

4️⃣ Cook the tinga:

  • Add the shredded chicken to the sauce and mix well.

  • Let it cook for 10-15 minutes on low heat, until the chicken has absorbed the flavours.

5️⃣ Serve:

  • Serve the tinga on crispy tostadas or warm tortillas.

  • Garnish with cream, avocado, cream cheese and cilantro .
