Green Chilaquiles Recipe

Chilaquiles verdes are a traditional Mexican dish made of fried corn tortillas dipped in green sauce . They are garnished with fresh cheese, cream, red onion and cilantro , often accompanied by eggs or chicken . Perfect for a tasty and authentic breakfast! 🌿🌮✨
Ingredients (for 4 people):
Corn tortillas – 8 (cut into triangles)
Salsa verde – 500 ml (you can use La Costeña salsa verde or make it at home)
Seed oil – enough for frying
Eggs – 4 (optional, to accompany)
Crumbled fresh cheese (queso fresco or feta) – 100 g
Sour cream or Mexican cream – 100 ml
Red onion – 1 small (thinly sliced)
Fresh coriander – to taste
Avocado – 1 (optional)
Salt – to taste
Preparation:
1️⃣ Fry the tortillas:
Heat plenty of oil in a pan.
Fry the tortilla triangles until golden and crispy.
Drain them on absorbent paper and add a pinch of salt.
2️⃣ Heat the green sauce:
In a large skillet, heat the salsa verde until simmering.
Add salt if necessary.
3️⃣ Assemble the chilaquiles:
Add the fried tortillas to the green sauce and mix gently so as not to break them.
Let it cook for 1-2 minutes, just enough time for the sauce to be absorbed without the tortillas becoming too soft.
4️⃣ Cook the eggs (optional):
In a separate pan, cook the eggs sunny side up or scrambled, according to taste.
5️⃣ Serve:
Plate the chilaquiles, add the crumbled cheese, cream, red onion and fresh cilantro on top.
Top with sliced avocado and an egg on top, if desired.
Suggestions:
👉 You can add shredded chicken for a richer version.👉 If you prefer chilaquiles rojos , replace the green sauce with red sauce .
