Quesadillas Recipe

Quesadillas are one of Mexico's most beloved street foods: corn or flour tortillas filled with melted cheese and, if desired, enriched with meat, mushrooms or vegetables . Simple, tasty and perfect for any occasion!
Ingredients (for 4 people)
Corn or flour tortillas – 8
Oaxaca cheese (or stringy mozzarella or Asiago or fontina) – 300 g
Seed oil or butter – as needed for cooking
Salt – to taste
👉 Optional fillings:
Zucchini flowers
Mushrooms
Chorizo
Shredded chicken
Huitlacoche (if available)
Fresh coriander – to taste
Red or green sauce – to accompany
Preparation
1️⃣ Heat the tortillas:
Heat the tortillas in a non-stick pan or on a comal until soft.
2️⃣ Filling:
Add grated or shredded cheese to half the tortilla.
Add, if desired, one of the optional ingredients such as zucchini flowers, mushrooms, chorizo or chicken.
3️⃣ Cook:
Fold the tortilla in half to form a crescent.
Brush with oil or butter and cook on both sides until the cheese is completely melted and the tortilla is golden brown.
4️⃣ Serve:
Serve piping hot with red or green salsa and fresh coriander .
Add a few lime wedges for a finishing touch.
