Pozole Rojo is a traditional Mexican soup made with pork, hominy (cooked giant corn) , and a broth flavored with dried red chiles . Served with fresh vegetables and lime , it is a hearty and festive dish, typical of family celebrations.
Ingredients (for 6 people)
Pork ribs – 1 kg
Pork shoulder – 500 g
Hominy (precooked cacahuazintle corn) – 1 kg (canned or fresh cooked)
Garlic – 4 cloves
White onion – 1 whole + 1 chopped for serving
Dried Guajillo Chilies – 5
Dried ancho chili peppers – 3
Bay leaf – 2
Dried Oregano – 1 teaspoon
Salt and pepper – to taste
👉 Garnishes for serving:
Iceberg lettuce – chopped
Radishes – sliced
Lime – in wedges
Oregano – to taste
Chili powder – to taste
Tostadas – optional
Preparation
1️⃣ Cook the meat:
In a large pot, cook the pork with onion, garlic, bay leaves and salt for about 2 hours or until tender.
Remove the meat and shred it, keeping the cooking broth.
2️⃣ Prepare the red sauce:
Toast the dried guajillo and ancho chiles in a pan for a few seconds.
Soak them in hot water for 15 minutes .
Blend the chili peppers with garlic and a little broth until you get a smooth sauce.
3️⃣ Combine everything:
Strain the sauce and add it to the meat broth.
Add the drained pozole corn and shredded meat .
Cook everything for 30 minutes and season with salt and oregano.
4️⃣ Serve:
Serve the pozole hot in bowls.
Top with lettuce, radishes, chopped onion, lime and oregano to taste.
Pair with tostadas for a true Mexican experience.
