PREPARATION
To make traditional tortillas, mix 2 cups of Harina Azul Maseca with 1 1/4 cups of warm water. Knead until the dough is soft and not sticky. Divide the dough into 1 ounce balls, roll them out with a tortilla press and cook on a hot griddle for about 50 seconds per side.
In addition to tortillas, this flour is ideal for making tamales, sopes, gorditas and atoles. Also experiment with making blue polenta or cookies for an original and colorful touch.
